POACHED CHICKEN
Poached Chicken
Ingredients -
3 whole skinless, boneless chicken breasts(6 halves)
1/2 yellow onion; peeled and sliced
juice from 1/2 lemon
3 springs parsley
2 small bay leaf
8 peppercorns
a pinch of salt
water to cover chicken breasts
procedure:
1. Cut chicken breast in half lengthwise
2. place breasts in a single layer in saute' pan(do not overlap, use two skillets if necessary). Cover with onion, lemon juice, parley, bay leaf, peppercorns, pinch of salt, and water. Chicken breasts should be completely covered with water, but not floating.
3. bring liquid to a boil
4. reduce heat to medium-low, cover with a lid. Cook for 10-15 minutes, until chicken is tender (do not overcook), or when its internal temp reaches 165 degrees (the ideal temp is 170 which will be reached by carry-over-cooking)
5. remove from heat, and let it cool in its own liquid.
