DISNEYLAND CLAM CHOWDER
5 T Butter + 5 T flour (make a roux, set aside)
2T oil
2 large potatoes, peeled and diced
1/2 cup onions diced
1/2 cup red pepper
1/2 cup green pepper
1/2 cup celery
clam juice 2 bottles
1 C milk (2% or whole)
1 C clams, chopped (chop up more)
1/2T dried thyme
1/2 teas salt and pepper
1/2 teasp tobasco
chicken broth
1. Large pot, heat oil and saute potatoes, onion, peppers, celery over medum heat until potatoes are tender. (10 min)
2. Add cream, clams, clam juice, seasoning, tobasco, and roux. wisk well to blend the roux.
3. Boil, then reduce heat and simmer. (not long, just until potatoes are done) salt and pepper!
